I am proud to say that we have survived our first full week of school, strep throat and my son's 7th birthday. Between stress at work and not feeling 100% the past few days, I have been really craving sweets. To help cut down at least some of my indiscretions, I have been making lots of dessert inspired smoothies. Snickerdoodle Cookies are my all time favorite cookie. I am a sucker for cinnamon, especially when it is mixed with sugar and vanilla. There is just something so inherently the combination. I always have a mixture of water, cinnamon sticks and a couple of drops of vanilla extract simmering on my stove. It makes my house smell like someone who bakes and does crafts and grocery shops and makes lists about all of those things actually lives in it. It is AMAZING. You can make it without the avocado, but it does give it a nice creamy consistency and adds some really good fat without changing the flavor profile too much. Spinach is my go-to green, it also doesn't have an overbearing flavor, so it really works well when you are trying to "hide the healthy" from your kids (or yourself).
